Ask the Home Economist
Q. So many recipes call for shallots but I never seem to have any on hand and they are so expensive! Can I sub something else?
A. Yes!
Haute cuisine adores shallots but for their price, I find them a timid cross of garlic and onion with hardly any flavor of either.
When a recipe calls for shallots, simply sub garlic and onion to taste.
But don’t you be timid. Be bold! Make a statement with your garlic and onion! Your cooking will taste all the better for it!!
Other questions in the column…..
Q. Sometimes my potatoes sprout. Can I still use them?
Q. I LUV Italian Eggplant Parmesan & Thai Eggplant with Black Bean Sauce but when I make these recipes, they never come out as good as I had hoped. Help!
